I found this yummy salsa recipe the other day and it was the hit of a party we attended. Peel and seed an avacado, and dice the fruit. Do the same for a mango. Dice 4 large tomatoes. Seed and dice a jalapeno pepper. Mix all in a medium bowl. Stir in 1/2 cup cilantro chopped, 3 chopped cloves garlic, 1 Tablespoon lime juice, a teaspoon salt, and 3 Tablespoons olive oil. Refrigerate 1/2 hour before serving, although I refrigerated overnight. Serve with blue corn chips. Yummy!
