also known as "get the kids to eat their vegetables" salad! i have no measurements or proportions. i just sort of chopped and poured and dashed and tossed as i went along. i am one of "those" cooks. cucumber, diced daikon radish, grated carrot,grated onion, finely diced optional vegetables: red pepper, green pepper, tofu, tomato... fresh garlic, minced fresh ginger, minced a drizzle of sesame oil a good squirt or bragg's liquid aminos or tamari soy sauce a dash of cider or rice vinegar a drizzle of honey or rice syrup sesame seeds toasted, i use the brown, hulled seeds dice the vegetables and toss them together. combine the garlic, ginger, and liquid ingredients, drizzle over the vegetables and toss well. (grown-ups may wish to add a little cayenne pepper - just a dash.) sprinkle with the sesame seeds and toss again. serve in pitas or over green leaf lettuce and/or mizuma. makes a good lunch for children, alongside orange sections, brown rice cakes or crackers or a little cup of japanese tamari-seaweed rice snack mix, and a big cold glass of chocolate soymilk.
