Are You Any Good At Making Rice Pudding?

    Hmmm I always have cravings for rice pudding...Ive developed such a like for cooking...Tho I just struggle to find a method of making it perfecto....

    Do you have any tips?

    Im willing to try peoples advice...as i haven’t tasted a proper rice pudding dessert since i was possible 8-9 years old :eek:

    I was actually going to make some probably tomorrow, I must first go through a few different recipes and chose one that looks best. One of my relatives collected old cookbooks so I have several old recipes for just about anything. I will update you tomorrow or the next day when I make it and give you the recipe if it comes out good. :)

    Well I'm crazy for rice pudding (but don't eat it all that often)

    I like to pre-cook my rice ( brown basmati) most folks use white, as it has more gluten (stickier)

    I like to cook my precooked rice w/coconut milk & vanilla, w/ agave syrup thrown in.

    Fresh powdered cinnamon. That's it.

    Not a *traditional western* recipe, but more of a eastern/Asian/Indonesian one.

    Im sure itll be intriguing trying it with brown rice...

    My granny makes the best rice pudding. She would boil the rice in milk until it was thick and creamy and add add sugar and cinnamon. I might phone her and see if there was anything else she would add.

    It was always lovely, but naughty!
     
  7. Yeah, then stick it in a hot oven to get a brown skin on the top. Oh my god, memories or what. i can't get pudding rice here so I have to make do with a type of round rice but it's not the same.

    Ok, I finally got around to making this pudding, recipe from the Culinary Institute of America's baking book to give credit where its due. I'm not very good at typing so I dont know how to make a list, but I will try. Put 32 ounces of milk in a saucepan, stir in 1/4 cup sugar and add 1 slice of orange and a cinnamon stick or 1/2 a teaspoon powdered cinnamon and bring to a boil. Add 1/2 cup rice ( your choice ) and simmer until tender (20 to 30 min.) Meanwhile as the rice is almost done combine 1 tablespoon cornstarch with 1/4 cup sugar, add 2 eggs and stir with a wire whip until smooth. Add 1/3 of the hot milk/rice mixture to the egg mixture and stir constantly with wire whip. Pour egg mixture into the remaining milk mixture in the saucepan. Continue cooking, stirring constantly with whip until pudding comes to a boil. Remove from heat, discard orange slice and cinnamon stick. Blend in 1 teaspoon of vanilla and add some raisins if desired but go very easy with the raisins, under a 1/4 cup. Pour into serving dishes chill and enjoy.:) Sorry the list did not work, but its a really good recipe and is very tasty.

    2 tbsp butter. 2 cups milk. 1/3 cup short-grain rice. 2 tbsp brown sugar. Pinch of salt. 1 tsp ground cinnamon [optional]. Preheat the oven to 325. Generously butter an 8-to9-in pie pan. Put the milk, rice, sugar, and salt into the pie pan and stir to combine well. Bake for 1 hour or until the rice is thoroughly cooked, stirring every 10 minutes or so. Spoon the hot pudding into bowls. Sprinkle the cinnamon over the top, if using. To everything there is a seasoning.
