I am neither responsible for the name, nor this creation of what is known as 'bbq crack' It's a jalapeño, cut in half lengthwise, with a little smoky (or some other meaty goodness) and cream cheese ( usually) stuffed in, wrapped with a slice of bacon impaled with a toothpick, and smoked. my changes- cored jalapeño (or a nice big serano, if you want something bigger), cheddar little smoky or smoked sausage of some sort, 4 cheese tex mex cheese shreds (If I'm using a serano, I add some diced jalapeño, wrapped with bacon and impaled side by side on a bamboo skewer, and hanging by the ends of the skewer in a loaf pan. either way, smoke (without water) at 300 for roughly 2 hours (bacon should be crisp) or bake in the oven at 350 for an hour and about 15 minutes. If you don't like jalapeños, you can use banana peppers or something mild like that. Depending on how much of the internal ribbing you cut out, the pepper will be hotter or milder, but if you want more heat, leave the ribs in, or if you're a masochist, a habanero. Make more than you think you'll need, because I've seen racks of 20-30 of these vanish in a flailing cloud of hands, feet, forks and dust.
