angel hair shrimp florentine

    1/2 box Angel Hair pasta
    2 tbs butter
    1 tbs flour
    2 cloves of garlic, pressed
    1 1/2 cup milk or cream
    2 oz of cream cheese
    1 cup parmesan cheese
    1 pound of shrimp/salmon/chicken
    2 green onions chopped
    1 10oz pkg of frozen spinach

    Cook pasta according to box directions. In a sauce pan melt the butter and saute the garlic. Add the flour. It will become a paste. Gradually add the milk or cream nad stir until it thickens. When it is getting thick melt in the cream cheese and pour in the parmesan cheese. Meanwhile in the microwave make the spinach according to directions. In the last minutes of cooking the pasta add the cooked shrimp or salmon or chicken. Drain pasta and shrimp in a colander add spinach to drain the rest of it's juices too. In a big pasta bowl, pour in the pasta, shrimp and spinach mix well and then pour the cheese sauce over the top and continue to mix until thoroughly combined. Salt and Pepper to taste and more parmesan cheese on top.

    no....i wish i was....one of these days when i don't have a "normal" job, i'll be making elaborate lunches like this

    but while i'm still working for the man....i'm having some leftover spinach pizza.....
