Amish Funeral Pie.

    I got this from one of the Frugal Gourmet's books. Doesn't it sound delicious? I always wanted to make it. I was wondering if a local bakery would carry it. Or is there someplace online that would?

    The Amish serve it after funerals. But I think it would be good for any occasion.

    Anyone ever hear of it or try it?

    Amish Funeral Pie.

    1½ cups Seeded Raisins
    2 cups Water
    1½ cups Sugar
    4 Tbsp. Flour
    3 Eggs, separated
    Pinch of Salt
    ½ stick of Butter, melted
    Juice of one Lemon
    2 tsp. Grated Lemon Rind
    2 Tbsp. Sugar (for the meringue)
    1 baked 9-inch Pie Shell

    ~Boil Raisins, Sugar and 1½ cups of the Water. Combine remaining ½ cup Water, ½ cup Sugar (plus Flour), Egg Yolks and Salt. Stir into the Raisin mixture. Stir until thickened. Remove from heat and stir in the Butter, Lemon Juice and Rind. Cool slightly.

    Prepare meringue by whipping Egg Whites till stiff, add Sugar.

    Pour Raisin mixture into the Pie Shell. Cover with meringue.

    Bake at 350° for about 10 minutes, until golden brown.

    On a side note, Amish girls are WAY hotter than Mennonite girls...Have not had the pie,but would like to try
