easy caramel popcorn
3 quarts popped popcorn
3 cups unsalted mixed nuts
1 cup firmly packed brown sugar
1/2 cup light or dark corn syrup
1/2 cup butter or margarine
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
Spray a large shallow roasting pan with nonstick cooking spray. Combine popcorn and nuts in pan. Bake at 250 degrees while preparing the glaze. In a heavy 2-qt. saucepan, stir brown sugar, corn syrup, butter and salt. Bring to a boil over medium heat, stirring constantly. Without stirring, boil 5 minutes. Remove from heat; stir in vanilla and baking soda. Pour over popcorn; stir to coat. Bake at 250 degrees for 1 hour, stirring occasionally. Remove from oven. Cool; break apart. Store in a tightly-covered container.
