that must be true because you said it, but I know the times I have made yer recipes I have been very enthusiastically thanked for making them. actually you know what is odd (to me at least) I made your mexican pizza recipe...and I had leftovers... I literally put all the leftovers in a dish and nuked it....I substituted picante sauce for sour cream (Ihate sour cream) but to this day my coworkers tell me how awesome that dip was....

hey this was the recipe:
Cheesy Mexican pizza

1 (16-ounce) Italian bread shell
1 cup refried beans
1/2 cup picante sauce
1/4 cup black bean dip
1 (14 1/2-ounce) can diced tomatoes, obviously....use fresh tomatoes if you can
2 cups (8 ounces) shredded Cheddar cheese
1 cup (4 ounces) shredded Monterey Jack cheese with peppers
1 can sliced olives

Shredded chicken taco meat, if desired

Place bread shell on a baking sheet. Stir together refried beans, picante sauce, and bean dip, and spread over Italian bread shell. Drain tomatoes, and pat dry with paper towels; spoon over bean mixture. Sprinkle with cheeses. Add olives and chicken if desired. Bake at 450° for 10 to 12 minutes or until cheese melts.

oh geez......

tht was my personal edit of the original recipe.....I used the hormel chicken breast chunks...southwest instead of the la victoria shreaded chicken mmeat....

i'm going to have to say...i'd go sans chicken on that recipe....if i did use chicken, it would have to be organic.....cause....i can't eat chicken that's not organic/free-range....the chicken in the can....not for me....i'm just not a big fan of canned meat anyway....

just me....but yeah the rest of the recipe sounds yummy!

and i'm glad you enjoy all my recipes....and your coworkers enjoy them as well....i'm just passing my love for food forward whenever i post recipes.....and then by making the recipes, you pass it forward....and so on, and so on.....

after the fact I am glad I went with the chunks. I thought the shreds sounded good from my kitchenette while I was brainstorming toppings ...woulda been to greasy to say the least.
