Cardamom, coffee, and date shake. 4 Medjool dates, pitted. 1 1/4 cups organic milk. 1/2 cup cold espresso coffee. 2 scoops vanilla ice cream. 1/2-1 teaspoon ground cardamom, plus extra for sprinkling. Put the dates in a saucepan with half the milk and heat very gently until the milk just reaches boiling point. Remove the pan from the heat and let cool completely. When cold, transfer the dates and milk to a blender and add the remaining milk, cold coffee, ice cream, and cardamom. Blend until smooth. Pour into glasses and serve sprinkled with extra ground cardamom.

Sharp and tangy, this confection is just like cheesecake in a glass. If you serve it with graham crackers or ginger cookies, you almost have the real thing. 3 1/2 oz. cream cheese. grated zest and freshly squeezed juice of 1/2 unwaxed lemon. 1/4 cup prepared lemon curd. 1/2 cup Greek yogurt. 1 cup organic milk. Put all the ingredients in a blender and blend until smooth.

2 cups peeled, seeded, and diced papaya. 1 banana, sliced. 1 cup milk. 1 cup crushed ice. 1/4 cup Grand Marnier. 2 tablespoons fresh lemon juice (optional). Honey. In a blender, combine the papaya, banana, milk, ice, liqueur, and lemon juice, if using. Blend until smooth, add honey to taste, and blend to combine. Pour into a tall, chilled glass.
