I broke my eggs when i flipped them.. That is the most frustrating thing in the world

Steam your eggs instead of flipping them! Add a tablespoon or two of water to the pan and put the lid on until the yolks get milky-looking.

If you sprikle the eggs with butter before adding the water (a TBSP of water seems a little much to me) they are called "basted eggs."
heh, so dont flip them!
do them over easy (put a lid on them, then you dont have to flip)

When I make an omlette or a fritatta, I ALWAYS pour the eggs into a small skillet. When the eggs have set up enough for me to put my toppings on (usually onion and cheese) I sprinkle those on and throw it in the oven for about 5 minutes. When you pull it out it hasn't stuck to the sides, the bottom and top are golden brown (okay, so I like my eggs burned), then I can either slide it flat on a plate, or double it over and eat it in a sandwich.
Yesterday I made eggs and topped them with onions, provalone, co-jack, and bacon bit things for salads... I put it on toasted bread with spicy-hot mustard and it tasted exactly like a cheeseburger. Strange.

OK. see i am a professional cook. i know how to butter the eggs and everything. and basted eggs usually have a little runny white in them. I like them over easy. no runny white, completely runny yolk. sometimes, no matter how perfectly you have set them up, they will break anyway.

I remain... burnt eggs all the way!
i feel your pain...all egg yolks need to be runny. bleh on the hardened plastic solid yolk
