I have the recipe for the Elvis Presley cake....think maybe this is what you were talking about....it doesn't have coconut in it though....I'm searching through my recipes to see if I can find a pineapple coconut cake....

Elvis Presley Cake
1 (18.25 ounce) package white cake mix
1 (8 ounce) can crushed pineapple with juice
2 cups white sugar
1 (8 ounce) package cream cheese
1/2 cup butter, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans

Prepare cake according to instructions on package. Bake in a 9x13 inch pan. Allow to cool. Combine pineapple and sugar in saucepan. Bring to a boil. Spoon over cooled cake. In a large bowl, cream butter and cream cheese until smooth. Add powdered sugar and beat until smooth. Add vanilla. Add pecans and mix well. Spread cream cheese frosting over cake.

Nope, not yet, but I will this week. I have to pick up the pineapple and the cream cheese. The recipe is on my fridge ready to go :) I'll let you know as soon as I've made it. Well now that my mouth is watering....lol

Well finally I got a chance to do this one. Seemed like everytime I wanted to something got in the way.

I made it for my Mother's birthday today and it was soooo good! This one goes into the recipe box for sure! :D
