you must try these.......so simple...so good....
1 cucumber
1 T. salt
1 T. sugar
1/4 c. vinegar
2 T. water
Dash pepper
Peel 1 medium sized-cucumber. Thinly score lengthwise with the tines of a fork. Slice thin into a flat bowl. Sprinkle with salt; cover with a second bowl of the same shape and place a heavy object on top. Let stand several hours. Drain off juice; pour over cucumber a mixture of the vinegar, water, sugar and dash pepper. These are also really good when you serve them with curry.

its important to let them sit for a couple of hours with the salt.....that way...more of the natural wateriness of the cucumber comes out....
