never cook onion soup with turkey broth instead of chicken or whatever else...


it makes this heavy plodding flavour, as opposed to chicken with it's gentle pirouette of flavour across your tounge turkey makes it into a plodding circus elephant with leadan boots tromping across your pallete as though it were a slab of some god forsaken earth

it's edible, but it's just too heavy....

because it's either be a cook and be everyones bitch, a chef and need x number of years of experience, or school which 70% are probably fly by night operations that just bitch at you about how to clean your pots and the rest are too damned exclusive to accept me......

although joanne wier is a professional chef, and god knows how that happened.....

onion and mushroom soup is a nice thing, the mushroom is the prominent flavour, but you put in a toch mroe onion than you do mushroom

I'd thought about this, it'd be a nice little joint somewhere like palmdale california or los alamos, it would be called the quiche niche...


quiche would be a tertiary dish at best served only as a nod to the name, it would have a coffee house like feel to it with small tables and bookcases and big comfortable chairs

and karaoke on thursdays :)
