To each their own! I think it's good enough when you have no milk. That's a trick I developped when I was vegan and refused to consume dairy, still wanted to enjoy my mac'n'cheese but without the addition of milk so that's what I turned to.
Cheese, butter and milk or cream, plus salt, pepper and a bit of nutmeg make for some memorable cheesy goodness too.
i don't add milk, butter, or cheese. what snaps it for me, is when i run out of canned tuna to add to it.
