Healthy Sugar -Free, Chemical -Free, fiberous bread pudding (pic attached)

    So... I had to figure out a way to re-vamp my ultimate comfort food to make it healthy enough to eat for breakfast and not give me a sugar high. Here is my new version:

    1 100 percent whole grain baquete chopped into 1 inch cubes
    3 cups low-fat milk
    3/4 cup light agave nectar
    2 tsp vanilla
    3/4 cup rasins
    3 eggs
    2 tsp cinnamon, plus more for sprinkeling on top
    2 medium sized apples chopped into 1/2 inch pieces
    1/4 cup butter (i/2 a stick)
    olive oil for greasing the pan

    1. put bread, apples and raisins into large bowl
    2. heat milk with agave and butter until the butter has melted
    3. pour milk mixture over bread mixture and stir. Let sit for 10 minutes or until luke warm
    4. crack three eggs into bowl and whisk, add into milk/bread mixture and stir until completley blended
    5. grease 8x8 pan with olive oil and pour mixture in, sprinkle top with cinnamon and put in 350 degree oven for approx 60 minutes.
